Spinach side dish great for serving alongside simple meat dishes (ie: snitzel, pork, lamb, etc).
Cook spinach in some salted water. Set aside make a roux of margarine and flour and cook until golden brown. Take off stove and pot in some crused garlic, stir in some milk, return to stove and stir until thickened, put in cooked spinach and water and let thicken once more.
Serve with mashed potato.
