this is variant of another Bigoven Receipe - Killer Spinach.
Preheat the oven to 350 degree Fahrenheit.
1. Boil pasta with salt. remove when its 80% done (do not cook it completely). Strain, add 1 tbsp olive oil, salt, crushed red chili,
black pepper and sprinkle with some garlic powder and dried basil. Keep it aside.
2. Coarsely chop spinach and steam it until softened. (not completely cooked). In a stir fry pan, heat 2 tbsp olive oil.
4. In the meanwhile peel crush and finely chop garlic, slice onion (not too thin), slice mushroom (about 1 cm thick).
5. When the oil is hot - add garlic cook until golden, then add onion cook untill soft (golden). Now add mushroom and spinach and saute.
cook for 5-7 mins until mushroom and spinach get flavored. Turn off the heat and cool
6. Take a large baking casserole, add 4 eggs and beat well. Add melted butter, salt to taste, pepper, crushed red chili (optional) Basil (or any
herb of your choice). Add pasta, spinach and mushroom mixture, jack cheese and mix well. Top with Mozzarella cheese and put it into
oven for about 25-30 mins... or until the mozzarella cheese turns brown.
Feel free to add any meat of your choice, but make sure to modify the baking time accordingly (if you are using uncooked meat)
