An incredible combination of flavors! Definitely a hit! If you don't have kalamata olives, or don't like them, then just leave them out - do not substitute regular black olives (the flavor will not go well).

1 large Naval orange
1/4 cup Citrus Vinaigrette; (approximately; see separate recipe)
8 cups Spinach leaves; torn
2 Scallions; very thinly sliced
1/3 cup Feta cheese; finely crumbled
16 Kalamata olives

Original recipe makes 4

1. Peel the orange and separate the sections. Remove any course membranes, then cut each section in half and place in a small bowl. Toss with a teaspoon or so fo dressing, just enough to coat them lightly.

2. Place the spinach and scallions in a large salad bowl. Just before serving, toss with approximately cup dressing, just enough to coat the leaves.

3. Divide the spinach onto 4 salad plates. Sprinkle on the oranges, feta cheese, and olives. Serve immediately.

"Wow! This is really good!" This is what my husband said after his first bite; I definitely agree!

I made this for a group of people and thought I would have plenty for my own personal leftovers. Well I was wrong, it went quickly and it was very easy to make. Really delicious and refreshing flavors.

This did not suit my taste.

I made this last night. The only changes were that I used a can of mandarin oranges and I left out the olives. Everyone raved about how great it was!
