Sister Mary makes a great soup, here it is.
Covers peas with 2 quarts cold water and let sit overnight. Add ham bone, onion, and seasonings. Bring to boiling , cover and reduce heat to a simmer, do not boil for 1 1/2- 2 hours. Stir occasionally. Remove bone and cut meat off and dice. Return meat to soup, add vegetables. Cook slowly for 30-45 minutes.
