Rest for 30 min covered with a damp cloth.
Roll out very thinly on a floured surface and brush generously with oil.
Sprinkle over spring onions in an even layer and season well.
Roll up like a pancake then cut in half then roll out each half into a round.
Brush with oil and fry on medium high 5 min until brown and crispy.
Repeat with remaining dough.
Cut into wedges to serve.
