Mix sour cream and mustard.
Heat cast iron skillet on high. Season beef with s/p. Put in oil, brown beef in skillet. Remove, oil as needed carrots and onion to skillet. Cook 5 minutes till browned.
Add broth and potatoes, bring to boiling. Reduce heat and cook covered for 15 minutes till tender. Return beef to skillet and simmer covered for 8 minutes. Reserving broth in skillet, transfer meet to platter. Add spinach to broth and serve with meat and veggies when done.
