Vegetarian Chili
Sweet with a little Heat
In slow cooker combine chickpeas, beans, tomatoes, corn, carrots, garlic, onion.
In a bowl combine ketchup, honey, chili powder, cayenne. Mix well & add to slow cooker.
Cover & cook on low for 8-10 hrs or high for 4-6, until hot and bubbling.
Then add peppers & cook for 20-25 mins longer. Serve with sourcream & cheese.
Hard to mess this one up and its yummy. I've even skipped the step of combining the ketchup, honey, chili powder and cayenne in a separate bowl and just put it all in the pot. Just be sure to mix it all well, I usually mix it periodically through the first hour to ensure this.
