My grandmother would make this for holidays, I think it reminded her of a catholic church windows. Regardless, I loved this and would eat as much as possible. To make it a little healthier, you can use sugarfree jello's and make your own whipped cream. Also, the flavors can be whatever you like, can even change them up for the color. If you change the lemon, the "white" will be that color.
If possible, the day before, prepare the three gelatin's separately, using the package directions. Pour each flavor separately into an 8-inch square pan that has been lightly sprayed with non-stick vegetable spray. Chill overnight or for recommended time.
Cut into 1/2-inch cubes with paring knife dipped in hot water. Set aside a few cubes of each color for garnish.
Dissolve lemon jello in 1 cup boiling water. Stir in pineapple juice; chill until slightly thickened. Blend in Cool Whip Or homemade whipped cream, fold in gelatin cubes. Carefully spoon into a serving dish or 9x13 cake pan. If the kids did not eat the reserved cubes, garnish; chill until firm.
