Suggest a better descriptionIn a bowl empty the sour dough starter, the water and the honey and whisk together. Add to that the white, wholemeal flour, salt and mixed seeds and mix together to form a sticky dough. Turn the dough out onto a surface and use a scraper to knead it, Knead for five minutes then let the dough rest for five minutes to soak up some of the water, then begin again kneading. Knead it for about 10 more minutes. You should feel the dough start to resist you, after 10 minutes or so put the dough back in the bowl you used to mix it, cover it either with clingfilm or a towel and leave it to rise for a good hour. Depending on the general heat of the room this may actually take 2-3 hours, in fact the dough won't really mind if you leave it longer.
Once the first rise has taken place, turn the dough out so the top is sitting on the counter, then perform a standard stretch and fold manoeuvre on it.Once thats done you can either leave the dough again or go ahead and for a tight sausage and place in a greased tin.Let the dough rise again for about an hour and you can then pop it in the oven.
If your dough has not risen that well put your bread in a non-heated oven and then whack the heat up to 220C/428F and cook for about 15 minutes. Turn the oven down to 200C/390F for the next 10-20 minutes.
If you think it's cooked turn the bread out onto a cooling rack, tap the bottom and it should sound hollow and be springy. Leave to cool fully then eat and enjoy,
