Be sure to let this sit for at least 1 hours prior to serving. If at all possible, use fresh mint as it taste far better.
Clean strawberries, remove stem and quarter. Set aside.
Put garlic, vinegar, honey, salt, Tabasco sauce and mint into food processor. Process till well blended and smooth.
Add strawberries and pulse till chopped but NOT pured.
Refrigerate mixture for at least 1 hour before serving.
Serve with baguette rounds or your favorite crackers. Very nice poured over a warmed brie round.
NOTE: If using dried mint, increase to 2 teaspoons.
