Grilled steaks with caramelized onions and melted gorgonzola.
Heat the oil in a large skilled over medium high heat (6).
While heating, slice the onion as thin as you can.
Add the onions and salt to the skillet and stir well to coat with oil and salt.
Sauté the onions until they are translucent and soft, and begin to brown, about 15 minutes.
Add the vinegar to the onions while stirring constantly, and sauté for another 3-4 minutes, stirring occasionally.
Reduce the heat to low, spread the onions into two thin, steak-shaped groups, and cover with gorgonzola to allow it to melt.
While sautéing the onions, fire up the grill to searing temperature and coat the steaks in olive oil and coarse salt, to taste.
About 10 minutes into sautéing the onions, reduce the grill to medium and throw on the steaks, cooking for 3-5 minutes on each side to make them medium-rare.
Serve the steaks with the onions and gorgonzola on top.
