Fresh green beans first steamed over wine then sautéed with garlic and onions. My picky eater loves green beans this way! This recipe uses Olive Oil - no you don't need bacon for a rich, wonderful flavor!
First choose a large frying pan you can cover. Ideally the beans should be able to fit in the pan in approximately a single layer and a lid will be used. Heat oil in frying pan over medium to high heat. Add the onion and stir to coat. At this heat the onions will cook quickly, stir occasionally but let them get just a little brown at the edges. Add the garlic and stir to coat. The garlic will start to brown, do not cook more than about a minute. Add the wine - it should sizzle and start boiling. Keep the heat on medium and let the wine cook down for about a minute. Add the green beans to the pan making a single layer - do not stir. Cover the pan and let the beans steam for about 5 minutes. Remove lid and stir so beans are coated with the oil. Keep heat on medium, add the pepper and season salt. If you like crispy green beans turn off heat, if you like them softer let them sauté 3-5 minutes stirring occasionally before you turn off heat.
This recipe really is easy. Cut up onions & garlic first because it goes quickly. The wine is supposed to really react to the heat and that makes some people nervous but this is what really releases the flavor from the onions & garlic. Once you see this process it won't be as scary again - you'll see it's simple. Recipe is easy to double but needs just a bit more time to cook wine down then steam.
