Polpettine all' emiliana
Make the meatballs:
Place veal, bologna, garlic, bread crumbs, heavy cream, egg, Parmesan cheese, parsley, and salt in a bowl. With clean hands, gently combine all ingredients until well-blended. Separate mixture into 8 pieces and gently form each piece into a large meatball, about 2 inches in diameter.
Make the sauce:
In a large, deep saute pan over medium-high heat, add 2 tablespoons olive oil and the diced bologna. Saute, stirring over medium-heat for approximately 5 minutes until the bologna pieces brown. Add the remaining oil, garlic, red pepper flakes, and onion. Cook for approximately 5 minutes, continuously stirring.
Add the white wine and stir, making sure to dislodge the browned bologna at the bottom of the pan. Cook for 3-4 minutes, or until wine is reduced to a glaze. Add the tomato sauce, cream, and chicken stock. Bring to a boil then simmer for 15-20 minutes. Stir in Parmesan cheese and parsley.
Combine meatballs & sauce:
Add the veal meatballs to the sauce and bring back to a boil, stirring well. Continue to simmer for one more hour or until sauce is at the desired consistency. The dish can be served over boiled rice, mashed potatoes, or even pasta.
If the sauce needs to be thickened, a 1:1 mixture of flour and softened butter can be added.
