1 cup quinoa; cooked
3 cups cooked black beans; (or 2 15oz cans, drained and rinsed)
2 large sweet potatoes; shredded
1 cup cheddar cheese; shredded
1 tablespoon ground cumin
2 Eggs
1 cup salsa
2 tablespoons cilantro; for garnish

Original recipe makes 8 Servings



1. Preheat oven to 350. Prepare a 9 x 9 casserole dish with onstick cooking spray.

2. In a large bowl, mix together the quinoa, black beans, sweet potato, 1/2 cup of the cheese, cumin, salt, and pepper.

3. In a small bowl, mix together the eggs and the salsa. Pour the salsa mixture over the vegetables, then pour everything into the prepared casserole dish.

4. Sprinkle the remaining cheese over the top and bake, uncovered, for 30 minutes. Garnish with the cilantro.

Delicious! I didn't have enough cheddar to mix in and put on top so I put it on top and used a little parmesan mixed in instead and it came out great.
