Ready in 20 minutes

Delicious, light chicken salad. Can be enjoyed year-round with canned or flown-in peaches, but also great for a spring or summer dinner with fresh peaches.

"Made this tonight with an unplanned substitution.

My wife came home from the grocery store with peaches that looked great on the outside, but when we cut into them, were really mealy. So we tossed them.

Fortunately, we had FANTASTIC strawberries (best ones we've had all year), and I'm here to tell you that coarsely chopped strawberries are a terrific substitute. Also added 3 tablespoons or so of finely diced red onions."

Ingredients

2 whole Chicken breast; cooked (boiled)
2 medium Peaches; sliced
6 tablespoon Poppy Seed Dressing (bottled)
1 head Butter Lettuce
1 stalk Celery; chopped
0.5 head Iceberg Lettuce
0.5 cup Pecans; chopped
12 Cherry tomatoes

I enjoyed this salad with a salad of baby greens tossed with olive oil and lemon juice.

I liked this and so did my weight-watching companions when they came over for a visit! Fast, flavorful and really fun to tweak. None of us really like poppy seed dressing so I used a light dill-mint dressing and let me tell you did that ever make those peaches stellar! I also left out the tomatoes and added some dried cranberries to the mix. TY for the inspiration!

We didn't want to heat up the house so we grilled the chicken. Turned out great! Im gonna alter it next time with a few changes.

Will make sure I buy sweet, juicy peaches next time. Have made this before using mango and preferred it.

With peaches out of season I made with dried apricots instead. Cubed a bag of them into the salad and it was still very good. Also used a s a leftover turkey alternative after thanks giving with pears.
