Delicious, simple berry sauce and fresh strawberries atop vanilla bean ice cream. Other fruits that work well with this recipe are raspberries, blackberries, blueberries, peaches, and mango.
Make berry sauce:
Heat water and sugar in a small saucepan over medium high heat, stirring occasionaly, until sugar is dissolved. Dice 1 cup of strawberries; add to mixture. Bring heat down to medium low; stir occasionally for 2-3 minutes. Remove from heat and let partially cool.
(This sauce can be made with blueberries, peaches, raspberries, blackberries, or other fruits that might be in season.)
Scoop 1-2 scoops of ice cream into each bowl. (If you have a tall glass or parfait dish, use it as the red and white colors make quite a nice presentation.)
Top with strawberry sauce and remaining fresh strawberries. Garnish with mint leaves; serve immediately, since the sauce is probably still warm. 15 mins start to finish.
Made these last night and it was a very simple, somewhat elegant finish to a fine springtime outdoor meal.
