Suggest a better descriptionHeat wok & add pine nuts. Dry-fry for about 2 minutes, shaking often to ensure that they toast but don't burn. Remove and reserve. Wipe any dust from wok.
Heat wok again, add oil and when hot, add red onion and stir-fry for 2 minutes. Add chicken and stir-fry for 2-3 minutes, or until golden brown. Reduce heat, toss in cherry tomatoes and stir-fry gently until tomatoes start to disintegrate a little.
Add baby spinach and stir-fry for 2-3 minutes, or until they start to wilt. Season to taste with salt & pepper, then sprinkle in grated nutmeg and drizzle in the balsamic vinegar.
Finally stir in reserved pine nuts. Serve immediately on a bed of buttered egg noodles.
