Blend all ingredients except cheese in a blender. Add to large pot on medium heat. Add cubed cheese. Stir often until cheese is melted. Cheese dip will thicken as it cooks.
I always leave out the salsa and use a whole can of chili/no beans.

MRenee110What do you use for dipping? Bread?3y ago
cynhaynesI went to High School in Conway with Mr Stobaugh's daughter. We used to get this cheese dip for class events. I loved it so much! This recipe is as close as I've had, and I've tried many! I made some tonight. I left out the salsa and used a can of Hot Dog chili, as it has the texturized vegetable protein like the original has.3y ago
Callie.HeathscottYou use powdered coffee creamer. I live in the town that has this restaurant and this tastes exactly like it!6y ago
Steffie_MarkI grew up in Conway, Arkansas and eating at Stoby's was a regular trip to town. I moved to Seattle about 5 years ago and have missed having Stoby's Cheese Dip ever since. This is pretty close and tasted good. I would definately leave out the salsa and I will probably try it with about half the chili next time. I used a whole can this time.7y ago
