Strawberry and Goat Cheese Salad

Very nice beautiful salad... could make a nice salad for a romantic dinner with a special person


1 cup Lettuce, such as arugula, romaine or green leaf
1 cup Mixed greens
200 grams (about 1 cup) Strawberries
100 grams (3.5 oz) Goat Cheese
1 tablespoon Extra virgin olive oil
1 tablespoon Balsamic Vinegar
1 pinch Salt

Original recipe makes 2 Servings



Divide the lettuce between two plates then add the mixed greens. Cut each strawberry into 4 slices then place the strawberries on top of the mixed greens. Cut the goat cheese (could also use goat mozzarella) into small cubes and arrange on top of the strawberries. Whisk together the olive oil, balsamic vinegar and salt, then drizzle over the salads.

This was so good! I made a few changes just for some variety...I used arugula as the lettuce which added a peppery flavor and added toasted sliced almonds for crunch. The flavors and texture worked wonderfully together.
