Another staple at any family gathering. We call them cookies, but there is absolutely no baking involved.
1) In a large bowl, combine coconut, condensed milk, extract, and 2 packs of Jell-O. Make sure that the mixture is somewhat thick, and not runny at all. If it is runny, add more Jell-O. Be careful not to add TOO MUCH as this will make it very sugary
2) Cover and chill in fridge for one hour
3) Grab bits and make into strawberry shape. The easiest way to do this to roll them into balls, and then use your finger tips to shape one end into a rounded point like a strawberry. You want it about 2 inches (5cm) from top to bottom.
4) Roll the strawberries in the extra Jell-O powder.
5) Use the icing to add the stems.
It's best to keep these in the fridge when you're not eating them - especially if you live in a warm and/or humid climate. They will melt. Also, please note that they have a lot of milk in them, and therefore they will mould if kept too long. But generally they don't last that long.
