Healthy Jam
1. Hot Method (jelly type)
Warm chopped strawberries in sauce pan for 2 min.
Remove and blend in blender till smooth -( I add 1 tablespoon of water to the empty blender and swirl to get remaining berries)
Return to sauce pan, add lemon, water and chia seed, bring to boil while stirring constantly for 5 minutes
Remove from heat, add stevia & vanilla.
Pour into desired containers and chill
2. Cold Method
Put whole strawberries in a pot of warm tap water (not hot) to soften for about 5 min.
Remove, put 1/2 in blender and chop finly and mash 1/2 with fork.
Add Chia, Lemon, water, stevia and vanilla
Cover and chill for 45 min.
