A great side dish that's easy to make ahead -- just pop them in the oven when you're ready!
Preheat oven to 400?
Scrub potatoes, pierce with a fork, wrap in foil and bake for 1 hour, or until tender. LEAVE OVEN ON.
Slice 1/2" off the top of each potato, and scoop out pulp into a bowl. Add all the additional ingredients into the bowl and beat with a hand mixer. Spoon potato mixture back into the potato shells. Bake 25-30 minutes, or until top is golden.
