Mexican style stuffed bell peppers
Hollow out bell peppers and place in boiling water. cook until soft. Place rice in pot with the suggested amount of liquid (I use chicken stock). add chopped onion, garlic, chili powder and S&P. Cook rice according to package. Once rice is cooked add in ground beef, tomato and half the cheese. Stuff into bell peppers and top with remaining cheese. Place peppers in a shallow dish and broil until cheese is melted.
