Cook rice according to directions
Cut tops off peppers and save
Clean out peppers and cut bottoms so they stand
Brown beef in skillet
Add garlic, onion, cut up pepper tops, spaghetti sauce and cooked rice to skillet
Add 4 slices of provolone cheese and let melt before mixing
Stuff peppers with meat mixture and place in baking dish
Surround peppers with remaining mixture in dish
Bake covered in oven for 30 min
Un cover and place cheese slices on top and bake 5 more minutes or until cheese is melted
Peppers can be blanched before stuffing for a softer pepper
