Outstanding Polish Comfort Food!
Core the cabbage and place core side down in a large pot with 2 inches of water. Cover and steam. As it steams, take off the outer layers of leaves as they soften (they should come off easily) and place on a plate.
Cook rice with a little bit less water than directions say and stop when it is slightly undercooked. Put rice to the side to cool.
Sauté the butter, onions and garlic until tender. Set aside to cool.
In a large bowl, mix all of the meat, rice, sauté mixture, salt, pepper, onion powder, garlic powder, eggs, and a few splashes of water and mix until combined. Line the bottom of a very large pot with the green outer layers of the cabbage. Then, stuff the cabbage. Place a leaf in the palm of your hand and put about 1/3-2/3 cup of meat mixture in the pocket. Roll it starting from the more hefty stalk portion of the leaf. Once rolled, fold over/push in the sides of the leaf into the meat mixture. Arrange them neatly in the pot. Then add the tomato soup until covered (1 can soup/1 can water). Sprinkle the top with dill, cover and simmer for 1 1/2 hours.
I usually like to serve this in a large flat bottom bowl with mashed potatoes, and corn.
While mixing, add the rice to the meat mixture until it looks about right. Don't go overboard on the rice, I usually end up adding a bit less than I think. Remember, it is undercooked too. Add enough salt an pepper for 3 pounds of meat. Don't worry about mixing the condensed tomato soup and water when you add it to the pot. It'll all combine just fine in 1 1/2 hours of simmering.
