Delicious crowd pleaser that is open to many variations. This is my #1 "off-the-cuff" main dish.
You need 3 bowls and a baking pan.
Coat the baking pan with olive oil.
Put the milk in a bowl and mix in the egg..
Chop up the onion, spinach and mushrooms. Mash up the garlic cloves and mix in with the vegetables in a another bowl.
Mix the Parmesan cheese, breadcrumbs, salt, pepper and herbs together in a bowl.
Flatten the chicken breasts. Pound them lightly with a bottle or mallet. Best if you wrap them in plastic first.
Put them in a bowl of milk and let them soak a little while..
Dip the chicken breasts in the breadcrumbs.
Layer the ham and then the cheese over the breaded chicken breasts.
Take a handful of the vegetables and wrap the chicken breast around it. Place the stuffed chicken breasts in the baking pan.
Bake at 385 F. for 45 min.
joetracy 1y agoLove this recipe and so does everyone I make it for. Take some time to prepare but oh so worth it. Kids will even eat spinach. ;)
SABQTRHRSE 2y agoI didn't use the ham. Used munster cheese instead of swiss. I also put extra veggies! It was delicious! Great recipe!

Heatherferg 5y agoVery tasty dish. Will add more spinach next time.
Tayrah52871 5y agoVery good! Looks and tastes sophisticated, but is so easy to make! Great for company.
cayococo16 5y agoThe picture does not belong wth this recipe as it is very deceiving...there is not a sauce with this dish as it is written. The recipe itself is confusing, I wasn't sure if I should add the leftover milk in order to make a sauce or if the cheese was going to create this. Nice flavour but had to improvise a lot.
Coldfire77 5y agoVery tasty! Prep was a snap! Overall good texture and flavor! Will do again.
ashmjohnson 5y agoI really liked this dish! I used Panko bread crumbs instead of regular bread crumbs and next time I think I will use a stronger flavored cheese instead of swiss, but otherwise delish!
