Chicken breast stuffed with stilton or St Agur cheese and wrapped in bacon
Take one boneless chicken breast and carefully cut a pouch in it without going right through,
Fill the pouch with one to two teaspoons worth of stilton or, my personal favourite, st agur cheese.
Wrap two strips of bacon round the chicken breast to seal the cheese in, dont worry if you did cut right through the breast when making the pouch as the bacon will help contain it, you will just get a bit more yummy juices during cooking.
Put in a deep tray and cook in a preheated oven for half hour at 180c, no need to turn over during cooking
Serve with fresh vegetables, the cooking juices make a nice gravy.
