A great snack for a football party or while snacking while smoking up a rack of ribs.
Mix ground beef (raw, yes raw), taco seasoning, salsa, and cheese together.
Stuff the Frito Scoops with the meat mixture and place on a 350f grill over indirect heat. Cook until the internal temperature reaches 165 degrees. Remove from grill and top with your preference of toppings. The original recipe called for sour cream or guacamole. We liked ours with fresh cilantro and ranch dressing.
Our notes: The chips did not turn out soggy but make sure you use only the lean beef (less rendering). It took about 25-30 minutes for the fattest chip to hit 165f at this temp.
