Comfort food to the max! This was my mom's recipe, and growing up this was such a treat!
**** PREPARE THE MEAT ****
Crumble the beef and Italian sausage together, then brown in the 2 tablespoons of oil with onion and green peppers. Drain off excess fat and set aside for the mixture to cool.
**** PREPARE THE SAUCE ****
Heat the oil in a medium sauce pan. Add the garlic, onion, parsley and sauté until the garlic is golden. Add the 2 cans of diced tomatoes and 1 can of tomato sauce, sugar, basil, salt and pepper. Simmer uncovered, stirring occasionally, until thickened, about 20 minutes. Adjust seasonings to taste.
Add 2 – 4 Tablespoons of the sauce to the cooled meat mixture. Then blend in the bread crumbs, Mozzarella cheese, the Italian parsley, salt and pepper. If the mixture is too dry, add more sauce.
Stuff the uncooked manicotti with the meat mixture and then cook according to package directions. 5 minutes before finished baking, top with the sauce mixture and add the extra Mozzarella cheese.
**** SERVING ****
Place manicottis on a serving platter, sprinkle with grated Parmesan cheese and serve with toasted garlic bread.
