Suggest a better descriptionIn large soup pot, sauté chopped onion in olive oil until slightly brown.
Add ground beef and cook through.
Add diced peppers, canned tomatoes and purée, broth, garlic and spices.
Cook 10 min. on low stirring occasssionally
Add pouch of rice and 1/2 cup shredded cheese, cook another 5 min.
Serve in low flat bowls and top with more shredded cheese.
