We have an awesome recipe for stuffed peppers and portobello mushrooms! They can easily be made #vegetarian too!
Dice and cook sausage in small frying pan. Scoop out inner meat of the mushroom, dice and add to frying pan. Stir until slightly browned.
Chop ends off bell peppers and scoop out the seeds and skin with the end of a spoon. Place mushrooms and peppers in a baking pan so they fit snuggly.
In a medium bowl, add remaining ingredients. Add warm sausage and mushrooms and mix well. Stuff the peppers with the creamy filling using the end of a spoon. Place the remaining mixture inside the mushrooms. Arrange so the peppers stand up and fit tightly within the pan next to the mushrooms.
Cover with aluminum foil and bake at 350 degrees for approximately 30 minutes or until lightly browned and stuffing mix is bubbly.
