Suggest a better descriptionPre-heat the oven to 400F.
Cut the tenderloin lengthwise, BUT make sure you donot cut all the way through (Butterfly cut)
Place tenderloin in some wax paper to flatten.
Combine the creamed cheese, spinach, tomatoes.
Season the inside of the pork with salt and pepper.
Fill the tenderloin with cream cheese mixture.
Roll up the tenderloin and secure with kitchen/roasting string.
Melt the butter and oil in a skillet and sear all sides over medium high heat until lightly browned.
Transfer tenderloin into the oven for 15-20 minutes depending on your desire of doneness.
