Italian themed stuffed peppers with Rice, Sausage, Provalone and Mushrooms.
Brown Sausage and drain, add to cooked rice, drained tomatoes and mushrooms in med mixing bowl. Stir in seasonings(Garlic/Ital and Parm).
Core peppers and remove seeds for stuffing.
Stuff peppers aprox 1/3 full making sure to fill as much space as possible.
Add provolone, either break up and make a layer, or create a cheese cup and begin filling again. Repeat until cheese is gone or pepper is full.
Layer some Parmesan on top of pepper for a nice crust, especially with convection ovens.
Preheat oven to 350 Degrees, place Stuffed peppers standing up on cookie sheet.
Cook for 20-25 minutes at 325-350 Deg.
