An old-fashioned favorite. These quick and easy sugar cookies are sweet and tender with wonderful crisp edges. They are delicious on their own or you can dress them up on the inside with new flavors (try lemon or almond) or on the outside with a simple sprinkling sugar on them before baking or wait until they are cool and add frosting and decorations for the perfect presentation.
In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
Preheat oven to 400 degrees F. Roll out dough on a floured surface to desired thickness (thin will make crispy cookies - a little thicker, approximately 1/4 inch will make fluffy, melt in your mouth cookies). Cut into desired shapes with floured cookie cutters. Place cookies 1 inch apart on a parchment lined cookie sheet (sprinkle with a little colored or Turbinado sugar, if desired).
Bake cookies for 6 to 8 minutes in preheated oven. Let sit a few minutes on the sheet, then transfer to a wire rack to cool completely. Enjoy as is, or frost and decorate as desired.
Makes about 5 dozen cookies (depending on thickness and size).
