These are the easiest and best sugar cookies ever! Make the dough in big batches and freeze some, it thaws beautifully. Here at Forest Ridge we use this dough to make our signature "Cookie Pizzas".
In a large bowl, cream butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover and chill for an hour, or overnight, or freeze for later use.
Preheat oven to 400 degrees F. Roll out dough on floured surface to 1/2 inch thick. Cut into shapes or press into pizza pan covered with parchment paper if making cookie pizza dough. Place cut out cookies one inch apart on ungreased cookie sheet.
Bake 6-8 minutes, being careful not to brown. Cool completely.
