This is an adaptation of a recipe that was originally found in the Portugal News.

"This is great. Roasted red peppers in the broiler complimented the salad well. Iused half the onion and avocado and it was more than enough. This was a great looking dish as well!"

Ingredients

1 small Red onion; finely sliced
2 Roasted red peppers; cut in strips
750 grams Large cooked shrimp; (31-40 count)
2 Mangos; peeled and sliced
3 Avocados; peeled and sliced
Arugula; washed and dried
Lime wedges
-- Dressing --
2 T Sugar
2 T Fish sauce
3 T Lime juice
1 T Rice wine vinegar
2 T Peanut oil
1/2 teaspoon Salt

Original recipe makes 6 Servings

Preparation

Combine all dressing ingredients and mix well. Combine first 5 salad ingredients and toss gently with dressing. Serve on a bed of arugula garnished with lime wedges and freshly ground pepper.

(Note: the original recipe mixes the arugula in with the other ingredients but I found it got too soggy. It also arranges mango and avocado slices on top of the other ingredients which I haven't tried but would probably look nicer.)

Awesome summer salad. We had this as a start for Xmas eve dinner and it went down well with everyone.
