Summer Prawn Salad

This is an adaptation of a recipe that was originally found in the Portugal News.


1 small Red onion; finely sliced
2 Roasted red peppers; cut in strips
750 grams Large cooked shrimp; (31-40 count)
2 Mangos; peeled and sliced
3 Avocados; peeled and sliced
Arugula; washed and dried
Lime wedges
-- Dressing --
2 T Sugar
2 T Fish sauce
3 T Lime juice
1 T Rice wine vinegar
2 T Peanut oil
1/2 teaspoon Salt

Original recipe makes 6 Servings



Combine all dressing ingredients and mix well. Combine first 5 salad ingredients and toss gently with dressing. Serve on a bed of arugula garnished with lime wedges and freshly ground pepper.

(Note: the original recipe mixes the arugula in with the other ingredients but I found it got too soggy. It also arranges mango and avocado slices on top of the other ingredients which I haven't tried but would probably look nicer.)

Really nice salad. I put with garlic cous cous instead of arugula and we had as a main meal. The fish sauce and lime juice dressing was lovely too, which I wasn't sure about before I tried it.

This is great. Roasted red peppers in the broiler complimented the salad well. Iused half the onion and avocado and it was more than enough. This was a great looking dish as well!
