Ingredients

10 small summer squash,; cubed
1 med tomato,; finely chopped
1 small red onion,; finely chopped
1/2 tsp ginger,; minced
1/4 tsp garlic,; minced
2-3 green chilies,; finely chopped
1 1/4 tsp salt
1/2 tsp turmeric powder
1/3 tsp cumin
1/2 tsp chili powder
1/4 tsp garam masala

Original recipe makes 8 Servings

Preparation

1. Heat oil over med heat.

2. Add cumin.

3. Add onions and cook to a light brown.

4. Add garlic, ginger, salt, turmeric powder, green chilies, and chili powder.

5. Mix in tomatoes. Stir occasionally until the mixture is reddish-brown.

6. Add squash, cook until tender.

7. Mix in garam masala.
