Suggest a better descriptionRinse rice till water runs clear. Cook in water for about 15 minutes (bring to boil then simmer 15 min). Let cool 10 min. covered. Place rice in a bowl, add vinegar, sugar and salt.
Skin avocado and mash till smooth. Stir in yogurt and some lime juice and salt to taste.
Chop shrimp and combine with diced veggies, coriander, lime juice and sesame oil.
Layer in clear martini glasses: shrimp mixture, avocado then sushi rice. Finish with a layer of shrimp mixture.
Garnish with 1 large shrimp and sprig of cilantro. Chill till ready to serve.
