Combine the beef, pork and veal in a bowl. Soak in water, milk, or stock to cover. Wring the liquid form the bread. Add bread to meat. Saute onions in butter until golden and add to meat. Add the rest of the ingredients and mix well with your hands.
Shape the meatballs by hand also into 1 1/2 inch balls. Saute the meatballs in 1 tablespoon butter or drippings until done and remove from pan. Deglaze pan with vermouth. Add beef bouillon. Heat and thicken with flour or cornstarch. Return meatballs to sauce.
