Sweet And Sour Chicken On Steamed Rice

This is not as hard as it sounds as the chicken and rice can be cooking while you then prepare the vegetables.


1 carrot; peeled and sliced
1/2 green pepper; seeded and diced into 1/2 inch sections
2 stalks Celery; sliced
1 medium onion; skinned, halved and then quartered
1 425-gram can pineapple pieces
2 tablespoons Vinegar
2 tablespoons Tomato sauce
2 tablespoons Brown sugar
2 tablespoons Soy sauce
1 cup water; reserve a 1/4 cup to mix with the cornflour
2 tablespoons cornflour

For the chicken, prepare Chicken Fingers recipe ID 157985

For the rice, prepare Boiled Rice recipe ID 42099

Note: Double the rice but not the water, just enough water to cover the rice by about 1 inch and rinse rice twice before cooking.

Sweet And Sour Sauce

In a saucepan combine all vegetables, pineapple pieces and syrup, vinegar, tomato sauce, brown sugar, soy sauce and 3/4 cup water. Bring to the boil and stir in blended cornflour mixture. Cook for 5 to 7 minutes on simmer, vegetables should still be slightly crisp. Place steamed rice on plates, top with chicken then pour sauce over. This sauce recipe is from a packet of Nurses Cornflour.
