Wholesome, easy tomato soup.
Fry the onion till almost brown.
Chop the tomatoes into large chunks and put it and the fried onions in a large pot.
Add the margarine, sugar, salt and tomato sauce.
Put the pot on a high heat till everything starts boiling. Stir in the boiling water.
Turn down the heat and simmer for no more than 5 minutes.
Blend everything together till smooth.
Taste the soup. If it is too acidic, add a bit more sugar. If it is too sweet, add a bit of salt.
Add pepper to taste and serve. Optional: Add 1 Tbsp of Red Pepper Pesto for extra flavour.
Put a bit of salt with the onion when frying it. It brings out the sweetness of the onion. Serve with cheese sticks, cheese Quesadilla slices or toast sticks with melted cheese on it.
