Marinate to taste using sweet chilli sauce, black pepper, salt and dried thyme and leave for at least 4 hours. Cover jacket potatoes with a small amount of oil and bake in oven at gas mark 7 for 25 mins.
Wrap fish in tin foil with a small amount of oil and place on a baking tray and bake on the middle tray of your oven. Reduce the temperature to gas mark 5 and cook for 25 mins.
Whilst fish and potatoes are in the oven, steam broccoli pieces and make gravy.
To make the perfect fact to compliment the dish, you need to slice half of a white and red onion and fry in a splash of oil for 2 mins. Boil the kettle and add in a fish stock and stir until smooth.
Don't be afraid to add a tad of chilli for a real kick.
