Cut peppers lengthwise, remove seeds and hollow out. Place in an 8x8 dish, sprinkle with salt and pepper.
Whip cheeses together, in mixer, until light and airy, approximately 2 min. Stir in thyme, 1/2 tsp salt & 1/2 tsp pepper, taste and adjust as necessary.
Fill peppers half way and level off.
Bake 15-20 minutes until golden and bubbly.
Place bread crumbs in bowl. Pour melted butter over crumbs and toss.
Sprinkle with crumbs and bacon.
