1. Preheat the oven to 350ยบ. Bake the sweet potatoes for 1 1/2 hours to 2 hours until soft throughout. Peel and cut the sweet potatoes. Put in a food processor.
2. Meanwhile, in a large saucepan of lightly salted water, simmer the turnips until tender, about 25 minutes; drain.
3. Add the turnips to the sweet potatoes. Add the brown sugar, butter or margarine, salt and nutmeg. Puree until smooth. Season with more brown sugar, butter and/or salt to taste. This recipe can be prepared to this point up to 4 hours ahead. Set aside, covered at room temperature.)
4. Beat the egg whites until stiff but not dry. Fold into the sweet potato-turnip puree. Turn into a greased shallow 2 1/2 - to 3 quart baking dish.
5, Bake the sweet potato and turnip casserole for 25 minutes, or until heated through. Serve at once.
