Another one of my Mom's favorites.
Rinse raisins in boiling water, drain. Combine sweet potatoes, sugar, oil and eggs in a bowl; mix well. Add flour; mix just until moistened. Fold in raisins and pecans. Fill greased muffin cups (or use paper liners) 3/4 full.
Bake at 350 degrees for 15 to 20 minutes. Makes 36 muffins.
Can eat plain or with icing.
