Bake sweet potatoes until well done. Scoop potato from skins into mixing bowl. Mix with sugar and butter. Season with spices and salt. Beat until smooth. Beat egg yolk slightly and add to with cream to potato mixture. Blend well. Fold in egg whites, beaten until stiff but not dry, and pour into unbaked pie shell. Bake in 350 degree oven for one hour or until center is set when tested. To brown crust raise oven temperature to 450 degrees for last 5 minutes of baking time.
EarthMatters 7 months agoThe amount of Sweet Potatoes would be better listed as cups rather than the somewhat vague amount of '4 medium'. I doubled the recipe and ended up with enough filling for 3 pies. The flavor was perfect but the consistency of mine turned more souffl? like, rising 3 inches above the pie tin while baking and then falling completely apart while attempting to serve after it cooled. I'm not a baker, usually, so my chef senses aren't kicking in to tell me what to do differently next time, tho I suspect too much sweet potato and possibly too much beaten egg whites. In any case, the flavor was delicious!
Whitedove 1 year agoI made this for Thanksgiving and everyone thought it was pumpkin. I put everything in a food processor except the egg white which I did fold in. Awesome pie. Thank you for an easy great pie recipe.
