To get 3 cups mashed sweet potatoes, boil about 2 1/4lbs. whole sweet potatoes with the skin on for about 40 minutes until they are soft. Drain, let cool until you can handle them, and remove the skin. Mash they potatoes in a large mixing bowl and let them mostly cool.
Beat in the sugar, eggs, cinnamon, nutmeg, salt, butter, milk and vanilla. Mix well and pour into the pie crust.
Bake for 10 minutes then reduce the heat to 300 degrees and bake for an additional 45 - 50 minutes more until the filling is set and no longer wobbly in the center.
