sweet potato casserole topped with marshmallows
in a large mixing bowl, stir together the mashed sweet potatoes, eggs, milk, sugar, 3 T. melted butter, orange juice concentrate, salt, and spices until smooth.. Spread mixture into a greased 2-quart rectangular baking dish. (The dish I use is oval.)
In a small bowl, stir together the pecans, brown sugar, flour, and 2 T. melted butter. Sprinkle over the sweet potato mixture.
Bake in 350 degree oven about 30 min. or until nearly heated through. Remove the casserole from the oven and sprinkle w/marshmallows. Return to oven and bake 5-10 minutes more or until marshmallows are lightly browned. Let stand about 5 min. before serving. Makes 12 servings. (I sometimes omit the marshmallows.)
Jtwizz 3y agoThis is fantastic! I added extra cinnamon and more nuts to the topping just because I like the topping. This was just as good as one we buy at the store. Now I'll just be making it!

hnymom99 6y agoI had a request for sweet potatoes with a marshmallow topping. This recipes has that and the pecan topping I like. It was simple to make and very delicious. 2 pinches of cinnamon & 1 of nutmeg were enough spices.
Bellitude 6y agoWe had our Thanksgiving early this year, and someone requested sweet potato casserole (with marshmallow). I found this recipie and it turned out great-- tasted wonderful too! The only thing I changed from the recipie, was that I used dollops of marshmallow fluff because I didn't have marshmallows.
