Sweet Potato Souffle

Deliciously crunchy topping makes this souffle almost dessert!


3 cups Sweet potatoes; mashed
1 cup Sugar
1/2 teaspoon Salt
2 Eggs; lightly beaten
1/3 stick Butter; melted
1/2 cup milk
1 teaspoon Vanilla
1/3 stick Butter; melted
1 cup Brown sugar
1/3 cup Flour
1 cup Pecans; chopped

Original recipe makes 10



Mix all ingredients together. Pour into a greased baking dish (6 quart, 13x9, etc). Cover with topping and bake for 35 minutes at 350.

This was a big hit with my family. I did use two 40 oz. cans of yams, drained. But the canned yams can not be mushy/watery after draining them. I have found it depends on the brand name. If they are firm it works great. Also halved the topping. Great recipe!
