Ready in 1 hour 25 minutes
Twice baked sweet potatoes, spiced with a hint of cinnamon, orange, and nutmeg and flavored subtly with Granny Smith apples. Even those who dislike sweet potatoes (yes they exist) will like this side!
"Really ingenuous, nothing I would have come up with myself! The slight tart crunch of the apples sets off the spiced and creamed sweet potatoes PERFECTLY and was utterly delicious. Keeping this in mind for Thanksgiving, TY! "
Heat oven to 350F. Prick sweet potatoes with fork to allow steam to escape. Bake for 55 to 65 minutes or until folk tender.
Cut thin, lengthwise slice from top of each sweet potato; scoop out inside, leaving thin shell. Place shells on 15x10x1-inch jelly-roll pan; set aside.
Place hot sweet potato and all remaining ingredients except apple in large mixer bowl. Beat at medium speed, scraping bowl often, until well mixed and no lumps remain (2 to 3 minutes). Stir in apples by hand. Fill reserved shells with sweet potato mixture. Bake for 20 to 25 minutes or until heated through.
If desired, do not stuff shells. Spoon hot sweet potato mixture into serving bowl.

juliesprankelhatfieldk7t8t0 1y agoI just made it in a casserole dish, but it was a favorite at dinner, by far! Thank you... this is a keeper... :)
Jebb36 1y agoThis was really good. The spices were not over-powering, but blended in nicely. I peeled and boiled the sweet potatoes though bc I was on a time restraint, but mixed everything else up accordingly and baked it without the shells.
Erincpeters 1y agoI've made this several times now, and both my husband and my son think of it as 'dessert with dinner' because it's so good. Awesome recipe!
Erincpeters 2y agoEven my veggie-hating in-laws liked this! I didn't bother with the potato skins, just used a baking pan. Very tasty.
